How do I get players to fight? I never see a fight in a game. Do they have it in the game?

Go to Tactics -> Personal Tactics, and there you'll see an option to set Fighting on: Not allowed, Allowed or Encouraged.
In the game you can see fights happen, if you watch the game highlights.

If you play a league in Europe (Elitserien etc) doubt you see a fight, atleast I haven't playing in Europe (please correct me if I am wrong). But if you play NHL (or AHL etc) you should have a fight now and then.

Fights in Europe are extremly rare because they result in a game misconduct plus a possible suspension. There are way more fights in north america because it only results in a 5 minutes major penalty.

Regarding fighting in the game..........
In season 1 of my Coyotes game I had Scott Parker & Brandon Prust on my 4th line. Both had alots of fights in year one.
Season 2.........I havent changed their tactics in anway, nor have I changed the teams tactics that would affect their performance but neither are hardly having any fights whatsoever. Both are getting the same ice time as last season.........
Anyone any ideas?

Do you have them set to encouraged or allowed fighting? Do you use line matching?

Yes to both. They are both set to "allowed" as per last season and they are both on the 4th line which is matched to the same line as last season.
Its very strange.

Maybe man to man instead of zonal coverage, berserker style, and very tight gap control??

Aggression/Bravery.
But make sure to scout your players, at least the 3rd and 4th liners thoroughly as they are typically the ones who fight. It'll come up saying Enforcer usually.
Another way to tell is by checking previous stats of major junior or another league. Fights instigated and fights won; don't make him the enforcer if he's a punching bag.
Also, you if want, you can set the over sized players to be allowed to fight. ex) Zdeno Chara. Or such as my game now year 202x ( not totally sure lol), Andrej Slovak 6'9 270lbs and his strength is set at 19.
