Do coaches actually improve?
because I recall hiring a coach with high potential as a test and his attributes never moved in several seasons.
How many assistant coaches can a team have?

Yes I believe they are supposed to develop over time but it's not something I've tested personally before.
A club can have a maximum of 1 Head Coach and 5 Assistant Coaches.
