I want to say that I am not new to the game, but I have found even as recently as today that there are a lot of functions that i am not aware of or some that i just plain don't know how to use.

That said, I have no idea how to sign a player to a new contract that includes incentives or option years. I can see on the contract page under the advanced tab where the incentives are, but I can't put a check mark in any of the boxes (they are grayed out).

There is also no place for me to offer an option year to a player. I am simply missing something or doing something wrong? Help please.

I think some clauses are only for certain leagues. For example, I don't think you can have a player / team option in the NHL, whereas in Europe these are quite common.

I'm not completely sure, but someone else will surely be able to confirm this...

The league he's playing in is indeed the issue. The NHL allows no option years and bonuses only under some strict conditions.
