As the titile really. I am still rubbish at this game, and still need help on tactic building, but what is a fun (and NOT stanley cup material} team to play as?
And a s a side note, is the AHL fun the play in?

It's definitely a good idea to start with a team with a good stable of prospects if you are a novice, but once you get better, look at a team with older players that is pushing the cap limit. These teams usually have little in the way of prospects to build from, so you really kinda build your own team from scratch. I found it such a challenge with the avs, because I avoid winning the cup in the first season, as I don't feel that I would be winning it with "my" team, or the team that I assembled. So the challenge becomes building with high draft choices, but also keeping the team competitive enough that you don't get fired in the early years. I almost got fired in my second year as the avs, but I managed to make a trade at the deadline that kept my results for the run-in just good enough to last the year.
