Click on the little arrow next to your GM name at the top of the screen, which will bring up a list of options including "Go on Vacation" (and there you can select how far to sim ahead); in the same list of options there is also "General Manager Options" where you can set some parameters regarding what happens to your team/how your team is run while you're on vacation

Also how do you get to the national pool for international hockey teams?

I'm not sure what you mean by "national pool"
At the top of your screen you can click World, and then from there click on National Teams (and then pick between Mens and U-20) to see Rosters

To find possible players for a National Team you'd do a Player Search and configure the Filter to give you what you were looking for

National pool is all the players available for international selection. As far as I remember, there is a screen like that in Football Manager, and that is probably what the questioner was referring to, and it includes all the players who are at least theoretically available for the international team (also including players who would refuse the call and those who are with their club teams).

You already answered the question, but I thought I would clarify that for you. :)
